49th Parallel Coffee Review Organic Espresso Review & Cookie Recipe! || Grounds For Divorce S2E10 In this segment, Rick & Paula review 49th Parallel’s coffee and a tasty cookie treat (recipe is right below!). Cocoa Espresso Bean Biscuits A.K.A. “Anjos’s Cocoa Espresso Adapted Portuguese Biscuits”
INGREDIENTS:
2 TBSP Soft Butter
¼ CUP Sugar
1 Egg – room temperature
2 TBSP Espresso or very strong coffee or extra fine grind espresso beans
½ TSP Vanilla (optional)
1 CUP Flour – all purpose is fine, I used “For Blending”
1 TSP Baking Powder
2 Generous pinches of Salt
1 ½ TBSP Cocoa Powder
INSTRUCTIONS:
Preheat oven 350F
1.In a mixer cream butter
2. Add sugar and cream together
3. Add egg and cream together until well blended
4. Add vanilla if using
5. In a separate bowl blend together dry ingredients (if using wet espresso or strong coffee add 1 more tablespoon flour – its ok if you do not add)
6. Slowly add dry ingredients to mixer – will eventually clump together in a big ball
7. Put in fridge for half an hour
8. Form oval balls slightly flattening, and place on parchment sheet lined baking sheet
9. Take knife and make indent half way down, across length of cookie
10. Bake for 10 minutes, then take out of oven and repeat step #9
11. Bake again for another 10 minutes, 15 for more crunch!
12. Remove from the oven, let cool a few minutes and enjoy – especially great dipped in coffee!!!
