Beer Chicken – Fast Recipe || Easy Instant Pot Recipes

We had guest cook, Nikki Haddock stop by and demonstrate her version of “Beer Can Chicken” done in the Instant Pot! This recipe is quick and super easy to do, enjoy!

Dry Rub: 1/2 cup Paprika 1/4 cup Chili Powder 3 tbsp Salt 2 tbsp Ground Coriander 2 tbsp Garlic Powder 2 tbsp Sugar 2 tbsp Curry Powder 2 tbsp Hot Mustard Powder 1 tbsp Black Pepper 1 tbsp Dried Thyme 1 tbsp Ground Cumin 1 tbsp Cayenne Pepper Cooking Instructions: Put Instant Pot onto “Saute” mode Put dry rub onto chicken, stuff chicken with lemon wedges. Add 2 tbsp of Avocado Oil into Pot. Saute chicken until skin is browned (about 3 – 4 mins on each side). Place Instant Pot rack in bottom of pot. Add 1 bottle of beer (you can use chicken broth if preferred). Place chicken breast up on rack. Put on lid, set valve to seal and put Instant Pot to Pressure Cook mode for 28 minutes. Once cycle is done, allow Instant Pot to do Natural Pressure Release for 20 minutes. Remove chicken and feast!
